Chicken Taco Soup...the easy way!




This is a Taste of Home recipe for a simple taco soup.  I embellished by adding some homemade chicken broth.




I cooked with a lot of fresh chicken recently so I took all my extra chicken parts and skin and boiled up a nice little broth.  You can use it for any soup but this broth is headed south of the border via the taco soup highway.




Remove and shred any chicken still on the bones, strain the broth...and add the shredded chicken back in!


The recipe:

1 lb chicken breast cubed
1 package taco seasoning
1 tbls vegetable oil
32 oz container of V8 juice
1 jar salsa
1 can black beans
1 can whole kernel corn


Cube a pound of chicken breasts and heat in a pan on medium high with a tablespoon of vegetable oil.  Stir for a couple of minutes and when they start to brown slightly add the packaged taco seasoning mix.  



Stir and remove from heat.  

In a large soup pot combine the V8, salsa, black beans and corn.  




Add the chicken, (and your homemade or store bought broth if you'd like ) heat to a boil, and reduce to a simmer for a couple of hours. 




If you added homemade broth then skim the fat off the top of the soup after it is done cooking and has set for a few minutes.  This soup is easy and pretty damn good. You could spice it up by adding cayenne or chili powder.  Garnish with cheese and chopped fresh cilantro.  Viva taco soup!
